The chef personally selects the day's fish from the boats of local Tinian fishermen, ensuring that only the freshest catch from the Aegean Sea arrives on your plate: common dentex, red sea bream, white sea bream, pandora, scorpionfish, and other rockfish perfect for a traditional 'psarosoupa' or 'kakavia' fish soup, as well as fresh squid, langoustines, and lobster available upon request.
At the same time, his quest for the perfect meat begins on Tinos but doesn't end there. He collaborates with the best local producers while simultaneously extending his search to distinguished stockbreeders from every corner of Greece to secure premium cuts with unparalleled flavor and texture.
